Beetroot Raita
Raita goes well with any flavoured rice - palak rice, capsicum rice, cauliflower rice or any other rice. Plain raita is prepared with curd and onions. Here I wanted to try a different version of raita - beetroot raita. This beetroot raita gives a nice pinkish colour and kids will love to eat because it is very colourful. This is very simple to prepare within no time.
I have introduced beetroot raita as pink raita to my kids
and they really loved it. My kids are very fussy when it comes to food. They don't like certain veggies and hence I tend to prepare these kind of dishes as they don't find the vegetables in them. And moreover, it looks very colourful and they are ready to jump on it.
I have prepared this in a microwave oven. This can also be prepared on the stove top and might take a few minutes extra.
Method :
Peel the beetroot and grate it. Put it in a microwave safe bowl and add salt.
Microwave it for 1 minute. Remove and stir. Microwave again for another minute. Microwave in this way until the beetroot becomes soft.
Remove from the oven and add finely chopped onion and green chillies.
Mix well and add curd.
Stir everything well and garnish with coriander leaves. This goes well with any flavoured rice.
If you do not have an oven, put the grated beetroot in a bowl and add salt. Cook until beetroot becomes soft. If required add little water. Once cooked, add onion, green chillies and mix well. Serve after garnishing with coriander leaves.
Ingredients :
Beetroot 1 ( small )Salt to taste ( approx. 1-2 tsp )
Onion 1 finely chopped
Green chillies 1-2 ( according to spice ). I took just 1.
Curd 5 tbsp.
Preparation :
- Peel and grate the beetroot.
- Take it in a microwave safe bowl and add salt. Microwave it for 3-4 minutes stirring in between after each minute.
- In case you are preparing it on a stove top, cook the grated beetroot with salt and little water until soft.
- Add onion and green chillies and mix well.
- Add curd and mix completely.
- Check for salt and spice and garnish with coriander leaves.
- One tsp of grated coconut can be added.
- If you want it more spicy, add chilli powder or more green chillies.
- A pinch of garam masala or black pepper powder can be added.
