Paala Undrallu / Milk Undrallu Payasam

Paalu undrallu is also known as undrallu payasam. The undrallu that are prepared with the rice flour are pampered with sweetened milk and dry fruits resulting in a delicious dessert which is loved by Lord Vinayaka. This Paala undrallu or paalu lo undrallu
is prepared with utmost devotion in every household in Andhra on the auspicious occasion of Vinayaka Chavithi.

Paala undrallu or Milk Undrallu is a melt in mouth dessert or sweet dish. The addition of grated coconut gives a lovely chewy texture to the sweet and the rice flour balls give a grainy texture.

Preparation




Prepare the undrallu from rice flour and keep aside. 


Heat ghee in a pan. Roast the dry fruits in this ghee and keep aside.



Take boiled milk in a vessel and add sugar.


Allow the sugar to dissolve in sugar. Stir occasionally until the sugar melts completely ( to avoid burning at the bottom of the pan ). Now add the rice flour balls or Undrallu and mix gently.


Now add the grated coconut.


Put the cinnamon powder and mix gently.


Take care not to break the undrallu. Now add the cardamom powder.


Finish off with adding dry fruits of your choice. I have used cashews and chironji seeds in my undrallu pudding.


Mix and serve hot, warm or cold after serving as Naivedhyam to God.

Ingredients




Milk 1l

Sugar 1 cup

Cardamom pods 6-8

Cashews 2 tbsp.

Chironji seeds 2 tbsp.

Kissmiss few

Ghee 2tbsp

Coconut ( grated ) 1/3 cup

Cinnamon powder 1/8 tsp ( optional )



Method




  1. Roast the dry fruits and nuts in ghee and keep aside.
  2. Take boiled milk in a vessel and add sugar. Let the sugar melt in milk completely. 
  3. Add the undrallu ( rice flour balls ) when the sugar is completely dissolved.
  4. After a minute, add grated coconut, cinnamon powder and cardamom powder. 
  5. Mix gently and carefully so that the undrallu don’t break.
  6. Add the roasted dry fruits and switch off the flame. 
  7. Serve as Naivedhyam ( Prasadam ) to God with full devotion and enjoy with your family and friends.

Notes




  • You can use jaggery instead of sugar. If you are using jaggery, then melt jaggery in a separate pan and strain off any impurities. Add the pure jaggery syrup to the milk. 
  • Cinnamon powder is optional. But it gives a unique and aromatic flavour to the dish.
  • A pinch of black pepper powder can also be added to give a punch to the paala undrallu.
