Broad Beans Stir fry / Broad Beans Simple Fry / Chikkudukaya Vepudu

Tender Broad Beans - They are very soft on touch and small in size. As they age, they become hard to feel and a little big in size. The ripe broad beans also have seeds developed in them. I like to select the tender broad beans for my stir fry since they cook fast and are easy on chewing. And health wise, they are considered to be an excellent sources of protein, fibre and carbohydrates. But, they some seem to have an allergy with these broad beans. So before preparing and enjoying, do check if you are allergic.

This is yet another simple daily dish that can be prepared very easily. This goes well with rice or even chapathi.

Preparation


Wash the broad beans well with water. Break each broad bean with your hand into bite-sized pieces, discarding the side threads (if any). Heat oil in a pan.


Once hot, add mustard seeds and cumin seeds.


When they splutter, add chopped onions and fry until they turn pink.


Add turmeric powder and broken broad beans.


Mix well and add salt and sugar.


Cover with lid and cook on medium flame stirring in between. When they change colour and become very soft ( as in the picture below ),

add chilli powder and mix well.


Fry for another 2 minutes and remove from flame. Serve with hot steamed rice or roti. I served with hot sambar rice.

Ingredients

Broad Beans 1/2 kg
Onion 1 large
Oil 2 tbsp.
Mustard seeds 1 tsp
Cumin seeds 1 tsp
Turmeric powder 1/2 tsp
Salt to taste
Sugar 1 tsp
Chilli powder 2 tsp

Method

  1. Wash the broad beans and break them into bite-sized pieces. Discard the side threads if any.
  2. Heat oil in a pan and add mustard and jeera seeds. Let them splutter.
  3. Add chopped onion and fry until turn pink in colour.
  4. Add turmeric powder and the broken broad beans pieces.
  5. Throw in salt and sugar and mix well. Cook covered on medium flame stirring in between.
  6. When completely cooked, add chilli powder and mix well.
  7. Fry for another 2 minutes and switch off the flame.
  8. Serve hot.
Notes

  • Dry red chillies can be added.
  • 1-2 tsp of channa dal can also be added.
